[Food File] - Ryan's Favorite.

We call them German Pancakes, you may call them thin pancakes, a form of crepe if you will. Ryan gives this recipe 5+ stars so I like to make it for him. I almost always have the ingredients needed, which makes this an easy meal to make in a pinch.

Ingredients:
2 cups all purpose flour
1/2 tsp salt
4 eggs
2 1/3 cups milk
little splash of vanilla

Combine all the ingredients into a mixing bowl and mix with hand mixer until smooth, with no lumps. (Usually 2 minutes) The batter will be very thin/runny.
Butter a hot fry-pan on medium heat. Scoop one ladle of the batter into the pan and use your wrist to rotate the pan, spreading the batter evenly over the bottom.
Cook until light golden brown, and flip the pancake to cook until light golden brown on the other side. I usually heat my oven to 200 degrees and have a round pan inside to hold the pancakes while I'm making them, so they all stay hot.

We have these pancakes with brown sugar, berries, and whipped cream. When fresh berries are not available, or are not in season, frozen mixed berries are a great option.
You could also try bananas & nutella, chocolate, or with any fruit such as peaches, saskatoon berries, kiwi, etc. They're perfect served with hot chocolate too!
I grew up having these at home, and we always just had brown sugar on them. Simple, and so good. Here's how Ryan does it...

*I have discovered that taking photos of food is not easy, especially in low light... so sorry for the crumby photos. Practice makes perfect!

    and seriously, food photos are the hardest! especially dinner photos, because they're always low-light.

  3. haha :) i am from germany. those are really our pancakes, except they aren't as thin as crepes, they are ca. double as thick. but way thinner than your american pancakes :)

    i like them with apples&almonds in it or with nutella on them.

  7. OOh. Yum. I'm so making these for breakfast tomorrow. I grew up with a very similar version of these . . . we love them with a slab of butter and some powdered sugar rolled up inside. Lately, I've been adding a pinch of cinnamon . . . yum! Oh, and we call them eggrolls. But seeing as how the recipe comes from my German grandmother, they're probably German pancakes. :)
